Ingredients • 4 Russet potatoes (10-12 ounces in size), scrubbed and pierced with fork Directions Preheat oven to 400°. Bake potatoes in microwave on high until tender, about 9-10 minutes per side. Cut potatoes in half; scoop cooked potato flesh into mixing bowl, leaving ¼-inch thick “potato boat.” Add milk, butter, four slices of Applewood Bacon Cheddar Singles Sensations® and chives in mixing bowl; mix well with potatoes. Season with salt and pepper. Spoon mixture into “potato boats.” Cut remaining four Applewood Bacon Cheddar Singles Sensations® slices into strips, and place over tops of potatoes. Place potatoes on sheet pan, may refrigerate or freeze at this point. Bake until potatoes are heated through and skins are crisp, about 20 minutes. |
